This book presents the results of the first interdisciplinary approach to evaluative morphology based on the intersection of evaluative morphology and areal typology, and provides the first large-scale typological research based on a sample of 200 different. Methodologically, it introduces the parameter of Evaluative Morphology Saturation, which identifies the richness of evaluative morphology in individual languages by reflecting the semantic, word-class and word-formation aspects of evaluative morphology. As such, this book provides a new and innovative approach to studying the semantics of evaluative morphology and evaluative-formation, represented by two cognitively founded models, a radial model of EM semantics and a model of evaluative formation. It is also the first contrastive psycholinguistic work that studies phonetic iconicity in evaluative morphology by way of experimental research into five different age groups of informants speaking three different languages.

One of the striking features of our times is the increasing utilization of chemical products in different fields of human activities, as a result of the spectacular progress of chemical research. Our food supply has not been spared from this general trend, however, and chemical sub stances are being continuously incorporated in foodstuffs. Some of these substances are added to food for technological purposes such as pre serving food from bacterial deterioration (antimicrobials), protecting it from oxidative changes (antioxidants), and improving its organoleptic characteristics (sweeteners, flavors, and flavor enhancers), or texture (stabilizers, emulsifiers, colorants). These substances are generally referred to as intentional food additives. Chemical substances may also be found in food as a result of environ mental or accidental contamination. Between these two categories of chemicals, a third class occupies an intermediate position, represented by chemical products utilized to control insect or fungus pests in agri culture and ectoparasites in animal husbandry. These products are cur rently referred to as pesticides and, due to some of their properties, such as chemical stability associated with scarce hydrosolubility, they may be found as residues in or on food from plant and animal origin. In addition, certain drugs that stimulate growth for accelarating productivity in animals may also be found as residues in edible animal tissues. These substances are referred to as unintentional food additives.

As is noted in the opening chapter of this volume, nutrition and public health programs have been important throughout Latin America and the Caribbean for many years. This is due to the spe cial concerns of those responsible for setting national policies, the program experience and leadership in public health developed by the national governments, and the stimulus and cooperation of the Pan American Health Organization (PARO), including its twelve associated centers which focus on research, training and program development. The need for a coordinated hemisphere-wide attack on malnu trition and other health problems was expressed clearly in the "Ten Year Health Plan for the Americas" (1). This plan established specific targets for reducing the prevalence of the major nutri tional diseases and other health problems for the decade 1971-1980. It was noted at that time that very few countries had formulated adequate comprehensive national food and nutrition policies and plans, nor had they developed strategies for combating the nutri tional deficiencies known to affect large numbers of people through out the Region. Following a review of the available data on a country by country basis in 1975, the PARO Directing Council en dorsed recommendations for formulating the necessary national poli cies and strategies for the intersectorial execution of food, nutri tion and health programs (2). This report also summarized the available national data related to nutritional status, existing programs such as food fortification, and the human resources avail able for services as well as for research and education.
