It may be due to a few reasons. The texture to me is fabulous. It is squeaky, milky and just so tasty. The taste is usually due to a mixture of sheep milk and/or goat milk. That is why! It is made with sheep milk and not cow milk! Also, if there is goat milk in the cheese, I am also a taker! I love goat cheese; it must be why Feta cheese is so different and delicious! However, do not celebrate too fast; it seems like goat milk cannot be more than 30% of the making of the feta cheese. The rest? Pasteurized cow milk! Nothing wrong with that, considering that most cheeses are made this way.
