Creating the Preserves: Pectin is a naturally occurring ingredient found in fruits that creates a gel when combined with sugar. Some recipes utilize fruits that are naturally high in pectin, while others may utilize powdered forms of this product, the body of the preserves made by cooking down the fruit and in turn straining this to remove the juices. Cooked together with sugar and other ingredients, the juices will thicken and encompass the fruit cooked in the first step of the process.
Canning the Product: Once the preserves have been creating, the product can be place in the jars used to hold it. After boiling down the preserves, any foam on the top of the product should be remove. Preserves can then be pour into the containers. Many canners choose to use a funnel to make this step a bit easier, eliminating the potential for waste in the process. About 1/4 inch of space should left between the lip of the jar and the preserves. Both the cans and the lids need to be warm in order to complete this process. Many choose to use their dishwashers to heat jars to a suitable temperature. Lids can be place in a small saucepan of simmering water until needed. Once the hot jars have been filling with preserves, the lids can be retrieved from the water and placed on top of the jar. The rings can then be adding, tightening against the lids until snug. Filled jars with their lids are then place in a canner, where they will be boiling for approximately 10 minutes. The exact method of operation differs from canner to canner.
