This recipe will also include a vegan version with tofu and mushrooms.Many think banh xeo is an egg-based crepe due to the yellow color. However, the crepe gets its color from turmeric powder rather than eggs. Banh xeo is also a popular dish in Cambodia where it is called banh chao.
